Oven-Sheet Chicken and Stuffing

INGREDIENTS:

  • 4 cups (0.95 l) of sourdough bread cubes
  • 4 cups (0.95 l) of multigrain bread cubes
  • 1 teaspoon of poultry seasoning
  • ½ teaspoon of garlic powder
  • ½ teaspoon of onion powder
  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons of canola oil
  • 6 tablespoons of unsalted butter
  • 3 cloves of garlic, minced
  • 1 sweet onion, diced
  • 2 carrots, diced
  • 2 celery ribs, diced
  • ¼ cup of chopped fresh parsley leaves
  • 1 tablespoon of chopped fresh sage leaves
  • 2 teaspoons of chopped fresh thyme leaves
  • 2 cups (0.47 l) of chicken stock

INSTRUCTIONS:

  1. Preheat the oven to 400 degrees Fahrenheit (ca. 204 °C). Lightly oil a baking sheet or coat it with nonstick spray.
  2. Spread the bread cubes in a single layer on the baking sheet. Place them in the oven and bake until they are crisp and golden, which should take about 10–13 minutes. Then, set them aside.
  3. In a small bowl, combine the poultry seasoning, garlic powder, onion powder, 1 teaspoon of salt, and ½ teaspoon of pepper. Season the chicken with this poultry seasoning mixture.
  4. Heat the canola oil in a large cast iron skillet over medium heat. In batches, add the chicken, skin-side down, and sear both sides until they turn golden brown, approximately 2–3 minutes per side. Set the seared chicken aside.
  5. Melt the butter in the skillet. Add the minced garlic, diced onion, carrots, and celery. Cook, stirring occasionally, until they become tender, which should take about 4–5 minutes. Stir in the parsley, sage, and thyme until they become fragrant, which should take about 1 minute.
  6. Remove the skillet from the heat. Stir in the bread cubes; season with salt and pepper to taste. Gradually add the chicken stock and continue stirring until it is absorbed and well combined. Allow the mixture to stand for 5 minutes, stirring occasionally, until the liquid is absorbed.
  7. Place the seared chicken in a single layer on the prepared baking sheet. Arrange the bread mixture in a single layer around the chicken on the same baking sheet.
  8. Place the baking sheet into the oven and bake until the chicken is cooked through, which should take about 20–25 minutes.
