Potato Pancakes

Ingredients:

  • 2 ½ pounds of Russet potatoes, or any starchy potato, peeled and finely grated
  • 1 yellow onion, finely grated
  • 2 large eggs
  • 1 teaspoon of salt
  • ¼ cup of all-purpose flour
  • Cooking oil for frying

How to Make Classic Potato Pancakes

  1. After grating the potatoes, use a towel to thoroughly squeeze out all the liquid from them.
  2. Place the drained potatoes in a large bowl, and add the grated onion, salt, eggs, and flour. Mix the ingredients thoroughly with your hands until the mixture becomes somewhat tacky. If it’s too sticky, you can add a bit more flour.
  3. Heat 3 tablespoons of oil in a skillet.
  4. Place ⅓ to ½ a cup of the mixture into the hot skillet. Fry for three to five minutes on each side, or until they turn golden brown.
  5. Briefly drain the cooked pancakes on paper towels.
  6. Serve immediately while they are hot. You can enjoy them with applesauce and a sprinkle of powdered sugar, sour cream, or even yogurt. These pancakes can also be served as a side dish with meat and gravy.
