CHICKEN FRITTERS

INGREDIENTS

10 oz boneless, skinless chicken or turkey,

trimmed of fat and diced into 1/4″ cubes;

1/2 cup Italian-seasoned bread crumbs;

1/4 cup chopped onion (used shallots and that works too);

1/4 cup shredded mozzarella cheese;

1 egg;

1/4 cup mayo;

1/2 tsp salt;

1/4 tsp garlic powder;

2 TLS olive oil.

Mix all ingredients together in a bowl.

Make 5–8 patties (depends on how big you want them).

Heat oil in skillet about 5 minutes; turn and brown on other side.
