My husband has a deep love for chocolate desserts, although we are usually dedicated to maintaining a healthy eating routine. Nevertheless, we do allow ourselves some indulgences during special occasions. For this year’s Father’s Day, I decided to surprise my husband with a Chocolate Mound Cake, which he claimed was the best cake I’ve ever baked. Normally, I prefer to prepare our meals from scratch, but I opted for a more convenient approach this time by using a cake mix. Despite my morning sickness, which, thankfully, is gradually improving but still strikes daily, I needed a hassle-free solution. The Chocolate Mound Cake received such enthusiastic reviews from both my husband and kids that I thought I’d share the recipe with you.

Ingredients:

  • 1 cake mix (white or yellow)
  • ½ cup cocoa
  • ½ cup sugar
  • 2 cups chocolate chips
  • 1 cup chocolate syrup
  • 8 oz. container of Cool Whip
  • 2 cups shredded coconut

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit and grease a 9×13 baking dish. Prepare the cake mix as per the package instructions, then add cocoa and sugar, mixing thoroughly.
  2. Pour the cake mixture into the prepared baking dish. Sprinkle 2 cups of chocolate chips evenly over the cake.
  3. Bake for approximately 30 minutes. Remove the cake from the oven and use a meat fork to poke holes in the cake.
  4. Warm the chocolate syrup and pour it over the hot cake. Cover the cake and allow it to cool overnight.
  5. Prepare the frosting by combining the Cool Whip and shredded coconut. Spread this mixture over the cake, then chill it. Your delicious Chocolate Mound Cake is now ready to be served
