Chicken Nuggets Ingredients:
- 1 1/2 pounds chicken breasts (3 large)
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour, cornstarch, or gluten-free potato starch
- 4 ounces mozzarella (1 1/3 cups grated)
- 1 1/2 tsp chopped fresh dill
- 1/2 teaspoon salt, or to taste
- 1/8 teaspoon black pepper
- 2 tablespoons very light olive oil for frying (or any high-heat cooking oil)
Garlic Aioli (Optional):
- 1/3 cup mayonnaise
- 1 pressed garlic clove
- 1/2 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
How to Make:
- Using a sharp knife, cut the chicken into 1/3-inch thick pieces and place them in a large mixing bowl. Tip: If the chicken breasts are partially frozen, it’ll be easier to chop them.
- In the mixing bowl, add the remaining batter ingredients: 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, 1 1/3 cups shredded mozzarella, 1 1/2 tablespoons dill, 1/2 teaspoon salt, and 1/8 teaspoon black pepper. Stir until well combined, cover with plastic wrap, and refrigerate for 2 hours or overnight.
- Heat a large nonstick skillet over medium heat and add 2 tablespoons of oil. When hot, add the chicken mixture, 1 tablespoon at a time. Flatten the top slightly with the back of a spatula and fry uncovered for 3-4 minutes on the first side, then flip and fry for 3 minutes on the second side or until golden brown and the chicken is cooked.
