🥣 Lentil Soup with Chorizo 🥣

Ingredients _

☑ 1 cup dried green or brown lentils, rinsed and drained
☑ 1/2 pound chorizo sausage, casing removed and crumbled
☑ 1 onion, chopped
☑ 2 cloves garlic, minced
☑ 2 carrots, diced
☑ 2 celery stalks, diced
☑ 1 red bell pepper, diced
☑ 1 can (14.5 ounces) diced tomatoes
☑ 6 cups chicken or vegetable broth
☑ 1 teaspoon ground cumin
☑ 1/2 teaspoon smoked paprika
☑ Salt and black pepper to taste
☑ Fresh cilantro or parsley for garnish (optional)

_ Preparation Steps _

1⃣ In a large soup pot or Dutch oven, cook the crumbled chorizo sausage over medium heat until it’s browned and cooked through. Break it into smaller pieces as it cooks. If the chorizo is very greasy, you can drain some of the excess fat.

2⃣ Add the chopped onion, minced garlic, diced carrots, diced celery, and diced red bell pepper to the pot. Sauté for about 5 minutes until the vegetables start to soften.

3⃣ Stir in the rinsed lentils, diced tomatoes (with their juices), ground cumin, and smoked paprika.

4⃣ Pour in the chicken or vegetable broth. Bring the mixture to a boil.

5⃣ Reduce the heat to low, cover the pot, and simmer for about 25-30 minutes, or until the lentils and vegetables are tender.

6⃣ Season the soup with salt and black pepper to taste. Adjust the seasoning according to your preference.
