Cilantro Rice

 

Ingredients

☑ 1 cup long-grain white rice
☑ 2 cups water
☑ 1 cup fresh cilantro leaves, packed
☑ 1/4 cup chopped white onion
☑ 2 cloves garlic
☑ 1 jalapeño pepper, seeds removed (adjust to taste)
☑ 1/4 cup vegetable oil
☑ 1 teaspoon salt
☑ 1 lime, juiced (optional for garnish)

_ Preparation Steps _

1⃣ Rinse the rice under cold water until the water runs clear. Drain the rice thoroughly.

2⃣ In a blender or food processor, combine the fresh cilantro leaves, chopped white onion, minced garlic, and jalapeño pepper.

3⃣ Blend the mixture until it forms a smooth, vibrant green paste. You may need to scrape down the sides of the blender to ensure everything is well blended.

4⃣ In a large saucepan, heat the vegetable oil over medium-high heat.

5⃣ Add the rinsed and drained rice to the hot oil. Stir and cook the rice for about 2-3 minutes until it becomes lightly golden.

6⃣ Carefully add the cilantro paste to the rice. Be cautious as it may sizzle.

7⃣ Stir the rice and cilantro paste mixture together, making sure the rice is well coated.

8⃣ Pour in the water and add the salt. Stir well.

9⃣ Bring the mixture to a boil, then reduce the heat to low.

🔟 Cover the saucepan with a tight-fitting lid and simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
