Mexican Tortilla Casserole

Mexican Tortilla Casserole is an easy-to-prepare vegetarian dish, perfect for a Sunday dinner or a get-together with friends.

Ingredients

approximately 1 pound. ground beef
or 1/2 cup diced onions
or 1 package taco seasoning mix
or 2 cups shredded cheddar cheese
or 1 can refried beans (easier to spread if you heat them in the microwave)
or 1 cup prepared rice ( I (used minute rice))
or 1 can Mexican corn mix (drained) only needs about 1/2 can
or 4-5 large flour tortillas
or 8 ounces chunky salsa ((choice of sweet or spicy)

Preparation Mexican tortilla casserole

Spray a baking pan, round baking pan or casserole dish with cooking spray
Brown ground beef and onions and drain
Add taco seasoning and cook according to package directions
Place 1 tortilla in the bottom of the pan and 1/3 of the beans on top Spread out, place 1/3 of the meat on top and sprinkle with a little cheese
2 layers of tortillas, 1/2 rice, 1/2 salsa, 1/2 corn and cheese
3 layers of tortillas, 1/3 beans, 1/3 meat, Cheese
4 layers of tortillas. Beans, meat, corn, rice, salsa and cheese
Cover with foil and cook at 350° for about 40 minutes. Uncover and cook for another 10-15 minutes.Wait 5 minutes before cutting. After cooking, spread with sour cream, diced onions and chopped lettuce if desired.
