Shrimp with Lemon and Garlic!
Ingredients:
1 pound large uncooked peeled shrimp
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
3 tablespoons Land O Lakes® butter with canola oil — divided
1 small shallot – chopped
1 cup chicken stock
1/2 cup dry white wine or low-sodium chicken broth
4 cloves garlic – minced
1 small lemon
1 tablespoon fresh rosemary or chopped thyme – optional but definitely worth it!
1/4 cup chopped fresh parsley
Instructions:
Pat the shrimp dry with paper towels and place in a large bowl. Sprinkle with salt, black pepper, and cayenne pepper. Toss to coat.
Heat 2 tablespoons of Land O Lakes® butter with canola oil in a large skillet over medium heat until melted. Add the shallot and cook for 1 to 2 minutes until it begins to soften. Add the shrimp in a single layer and cook without disturbing for 1 minute. Using tongs or a wide spatula, flip the shrimp. Add the wine, garlic, and chicken stock. Cook until the shrimp are no longer translucent and the wine has reduced by half, about 2 to 3 minutes more.
