Shrimp Scampi with Pasta

 

_ Ingredients _

☑ 8 ounces linguine or spaghetti
☑ 1 pound large shrimp, peeled and deveined
☑ 4 cloves garlic, minced
☑ 2 tablespoons unsalted butter
☑ 2 tablespoons olive oil
☑ 1/4 cup dry white wine
☑ Juice of 1 lemon
☑ Zest of 1 lemon
☑ 1/4 teaspoon red pepper flakes (adjust to taste)
☑ Salt and black pepper to taste
☑ 1/4 cup chopped fresh parsley
☑ Grated Parmesan cheese for garnish (optional)

_ Instructions _

1⃣ Cook the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.

2⃣ In a large skillet, heat the olive oil and butter over medium heat.

3⃣ Add the minced garlic and sauté for about 1 minute until fragrant, but be careful not to let it brown.

4⃣ Add the shrimp to the skillet in a single layer. Cook for about 1-2 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

5⃣ In the same skillet, add the dry white wine, lemon juice, lemon zest, red pepper flakes, salt, and black pepper. Bring to a simmer and cook for 2-3 minutes to reduce the sauce slightly.

6⃣ Return the cooked shrimp to the skillet and add the chopped fresh parsley. Stir to combine and heat through for another minute.

7⃣ Add the cooked linguine or spaghetti to the skillet and toss to coat the pasta with the shrimp and sauce.

8⃣ Serve your Shrimp Scampi with Pasta hot, garnished with grated Parmesan cheese if desired.
