Big Apple Fritters

Ingredients

1 1/2 cups all-purpose flour
1/4 cup sugar
2 tbsp. Baking powder
1/2 tsp. Salt
1 1/2 tsp.Cinnamon
1/3 cup milk
2 eggs
3 tablespoons applesauce
2 large Granny Smith or Honey Crisp apples, peeled, cored, and diced
Canola oil for frying

For garnish

2 cups powdered sugar
1/4 cup milk
1/2 Teaspoon vanilla

How To Make Big Apple Fritters

Place cooling racks on parchment-lined baking sheets. Put aside. In a medium bowl, combine
flour, sugar, baking powder, salt, and cinnamon.
Make a well in the center and add 1/3 cup milk, egg and applesauce.
Stir just until combined.
Fold the apples.
Heat 1 1/2 to 2 inches oil in a heavy cast iron skillet, Dutch oven, or deep fryer to 375ยฐF.
Put about 1/4 of the dough in a pan with hot oil; Scatter it when you fall.
Fry on all sides until golden brown; about 2 minutes per side.
Drain on absorbent paper.

Prepare Frosting

In a large bowl, combine 1/4 cup milk, powdered sugar, and vanilla.
Dip each cake in the frosting, tossing to ensure both sides are coated.
Place on racks to dry and drain.
