No Bake Caramel Apple Eclair Cake

Ingredients:
– 1 box graham crackers
– 2 boxes (3.4 oz each) instant vanilla pudding mix
– 3 cups cold milk
– 1 container (8 oz) Cool Whip, thawed
– 2 cups chopped apples (tossed in lemon juice to prevent browning)
– 1 cup caramel sauce

Instructions:
1. In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until thickened.
2. Fold in the thawed Cool Whip until well combined.
3. In a 9×13 inch (23×33 cm) baking dish, place a layer of graham crackers.
4. Spread half of the pudding mixture over the graham crackers.
5. Sprinkle half of the chopped apples on top of the pudding layer.
6. Drizzle half of the caramel sauce over the apples.
7. Repeat with another layer of graham crackers, the remaining pudding mixture, chopped apples, and caramel sauce.
8. Refrigerate for at least 4 hours or until the dessert sets.
9. Serve chilled.
