Surf and Turf baked potatoes

 

Ingredients:

For the Baked Potatoes:

4 large baking potatoes
2 tablespoons olive oil
Salt and black pepper to taste
For the Surf and Turf Toppings:

TURF (STEAK STRIPS):

1 pound sirloin or ribeye steak, thinly sliced
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and black pepper to taste
SURF (SHRIMP SCAMPI):

1 pound large shrimp, peeled and deveined
3 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup white wine
Juice of 1 lemon
2 tablespoons chopped fresh parsley
Salt and black pepper to taste
Optional Garnish:

Sour cream
Chives, chopped
Grated cheddar cheese
Instructions:

Baking the Potatoes:

Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Potatoes:
Scrub the potatoes thoroughly and pat them dry. Rub each potato with olive oil, salt, and black pepper. Pierce each potato with a fork a few times.
Bake to Perfection:
Place the prepared potatoes directly on the oven rack or on a baking sheet. Bake for 50-60 minutes or until the potatoes are tender when pierced with a fork.
Preparing the Turf (Steak Strips):

Season and Sear the Steak:
In a bowl, toss the thinly sliced steak with olive oil, minced garlic, dried thyme, salt, and black pepper. Sear the steak strips in a hot skillet for 2-3 minutes per side or until cooked to your desired doneness. Set aside.
Creating the Surf (Shrimp Scampi):

Sauté Garlic and Shrimp:
In the same skillet, melt butter and sauté minced garlic until fragrant. Add the shrimp and cook for 2-3 minutes or until they turn pink.
Deglaze with White Wine:
Pour in white wine, lemon juice, and chopped fresh parsley. Allow the liquid to simmer for an additional 2 minutes. Season with salt and black pepper.

Fluff the Potatoes:
Once the potatoes are baked, fluff the insides with a fork.
Topping the Potatoes:
Divide the steak strips and shrimp scampi among the baked potatoes. Feel free to mix and match or keep them separate.
