Chicken Thighs and Cabbage

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 medium green cabbage, chopped
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon chili flakes (optional)
  • 1 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • Fresh parsley (for garnish)

Instructions

  1. Season the Chicken
    Pat the chicken thighs dry and season with salt, pepper, paprika, and thyme.
  2. Sear the Chicken
    Heat olive oil in a large skillet over medium-high heat.
    Place chicken thighs skin-side down and sear for 5–7 minutes until golden and crispy.
    Flip and cook for another 3 minutes, then remove and set aside.
  3. Cook the Vegetables
    In the same pan, add onion and cook until soft (about 3–4 minutes).
    Stir in garlic and cook for 1 minute.
    Add chopped cabbage and cook until slightly wilted.
  4. Combine and Simmer
    Pour in chicken broth and apple cider vinegar.
    Stir, then place the chicken thighs on top of the cabbage.
  5. Cook Through
    Cover and simmer on low heat for 25–30 minutes, or until chicken is fully cooked and tender.
  6. Finish and Serve
    Taste and adjust seasoning.
    Garnish with fresh parsley and serve warm.

Method Tips

  • For extra crispiness, finish the dish uncovered for the last 5 minutes.
  • You can also bake it in the oven at 200°C (400°F) for 35–40 minutes after searing.
