Savory and Juicy Meatloaf with Ritz Crackers and Cheddar Cheese

1.5 lbs ground beef
1 cup Ritz crackers, crushed
1 cup sharp cheddar cheese, shredded
1/2 cup onion, finely chopped
2 large eggs, beaten
1/2 cup ketchup
2 tablespoons Worcestershire sauce
2 tablespoons fresh parsley, chopped
1 teaspoon garlic powder
Salt and pepper, to taste
For the Glaze:

1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
👉Directions:

Preheat Oven: Preheat your oven to 375°F (190°C).

Mix Ingredients: In a large bowl, combine the ground beef, crushed Ritz crackers, shredded cheddar cheese, onion, eggs, ketchup, Worcestershire sauce, parsley, garlic powder, salt, and pepper. Mix until well combined but try not to overwork the mixture.

Shape the Meatloaf: Transfer the meat mixture to a loaf pan or shape it into a loaf on a lined baking sheet.

Prepare the Glaze: In a small bowl, mix together the ketchup, brown sugar, Dijon mustard, and Worcestershire sauce until smooth. Spread this glaze over the top of the meatloaf.

Bake: Place the meatloaf in the oven and bake for about 55 minutes to 1 hour, or until the meatloaf is fully cooked through and the glaze has caramelized on top.

Serve: Let the meatloaf rest for a few minutes before slicing. Serve with your favorite sides like mashed potatoes or green beans.
