Crispy Spinach Cheese Fritters

- 4 cups fresh spinach (packed)
- 2 large eggs
- 1 cup shredded mozzarella (or cheddar, or mix)
- ½ cup grated Parmesan
- ½ cup all-purpose flour
(or almond flour for low-carb) - 2 cloves garlic, finely minced
- ¼ tsp salt (adjust to taste)
- ¼ tsp black pepper
- ¼ tsp chili flakes (optional)
- ½ tsp Italian seasoning or dried oregano
Optional Add-ins
- 2 tbsp chopped green onions
- 1 tbsp fresh parsley or dill
- Zest of ½ lemon (great freshness)

Instructions
Prepare the Spinach
- Add spinach to a pan over medium heat.
- Cook just until wilted (1–2 minutes).
- Let cool slightly, then squeeze out ALL excess liquid using a towel.
- Finely chop the spinach.
This step is key for crisp fritters.*
Make the Batter
In a large bowl:
- Whisk eggs.
- Add spinach, mozzarella, Parmesan, garlic, salt, pepper, chili flakes, and seasoning.
- Stir in flour until a thick, scoopable mixture forms.
Cook (Choose Method)
Pan-Fried (Extra Crispy)
- Heat 2 tbsp olive oil in a nonstick skillet over medium heat.
- Scoop 2 tbsp batter per fritter and flatten slightly.
- Cook 3–4 minutes per side until golden brown.
- Transfer to paper towel-lined plate.
Oven-Baked (Lighter)
- Preheat oven to 400°F / 200°C.
- Line a baking sheet with parchment.
- Spoon batter into thin rounds.
- Lightly brush tops with olive oil.
- Bake 18–22 minutes, flipping halfway.

Garlic Yogurt Sauce (Quick)
- ½ cup Greek yogurt
- 1 small garlic clove, grated
- Salt + lemon juice to taste

Tips for Best Results
Squeeze spinach very dry
