Big Pot of Chili

Ingredients
2 lbs (900 g) ground beef
1 large onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
2 cans (14.5 oz / 410 g each) diced tomatoes
1 can (6 oz / 170 g) tomato paste
2 cans (15 oz / 425 g each) kidney beans, drained and rinsed
1 can (15 oz / 425 g) black beans, drained and rinsed
2 cups beef broth
3 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon dried oregano
½ teaspoon cayenne pepper (optional, for heat)
1 teaspoon salt (or to taste)
½ teaspoon black pepper
2 tablespoons olive oil

Method
1 Heat the olive oil in a large heavy pot over medium heat.
2 Add the diced onion and cook for 4 to 5 minutes until soft and translucent.
3 Add the minced garlic and diced red bell pepper. Cook for 2 minutes, stirring often.
4 Add the ground beef to the pot. Break it apart with a spoon and cook until fully browned. Drain excess fat if needed.
