Coca-Cola Pork Loin

Ingredients

1 pork loin 1.5 to 2 kg
1 can Coca-Cola 330 ml
120 g brown sugar
60 ml soy sauce
4 cloves garlic minced
1 medium onion sliced
2 tablespoons ketchup
1 tablespoon Dijon or yellow mustard
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon salt
2 tablespoons vegetable oil

Preparation

Take the pork loin out of the refrigerator 30 minutes before cooking so it comes to room temperature

In a bowl mix Coca-Cola brown sugar soy sauce ketchup mustard garlic black pepper paprika thyme and salt until well combined

Heat the oil in a large pan over medium heat
Sear the pork loin on all sides until nicely browned
This step locks in the juices and adds flavor

Place the sliced onion in the bottom of a baking dish
Put the seared pork loin on top of the onions
Pour the Coca-Cola sauce mixture over the pork

Cover tightly with foil

Cooking

Preheat oven to 170°C

Bake covered for 2 hours
During cooking baste the pork with the sauce every 30 minutes

After 2 hours remove the foil
Increase temperature to 190°C
Bake uncovered for another 30 to 40 minutes until the sauce thickens and becomes sticky

Internal temperature should reach about 70°C

Remove from oven and let rest 15 minutes before slicing

Sauce

Pour the cooking sauce into a saucepan
Simmer on medium heat for 5 to 10 minutes until thick and glossy
Taste and adjust with a little salt or sugar if needed

Serving

Slice the pork loin and spoon the thick Coca-Cola sauce over the top

Serve with mashed potatoes rice cornbread or roasted vegetables

Tips

Do not use diet cola because it will not caramelize
For extra flavor marinate the pork in the sauce overnight
Add a pinch of chili powder if you like a little heat
