Ingredients
1 kg (2.2 lb) chicken wings
2 tablespoons olive oil
Marinade
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon cayenne pepper (optional)
1 teaspoon dried oregano or thyme
1 tablespoon soy sauce
1 tablespoon vinegar or lemon juice
Glaze Sauce
3 tablespoons ketchup
2 tablespoons honey or brown sugar
2 tablespoons soy sauce
1 tablespoon butter
2 cloves garlic (minced)
1 teaspoon paprika
½ teaspoon black pepper
Method
- Wash the chicken wings and dry them very well with paper towels. Dry wings = crispy wings.
- In a large bowl, add olive oil, salt, black pepper, paprika, garlic powder, onion powder, cayenne pepper, oregano, soy sauce, and vinegar or lemon juice. Mix well.
- Add the wings and massage the marinade into the chicken. Cover and let marinate at least 30 minutes (best: 2–4 hours).
- Preheat oven to 200°C (400°F).
- Place wings on a baking tray lined with baking paper. Arrange in one layer.
- Bake for 35–40 minutes, turning once halfway, until golden and cooked through.
Glaze Sauce
- In a small pan, add ketchup, honey (or brown sugar), soy sauce, butter, garlic, paprika, and black pepper.
- Cook on low heat for 5–7 minutes until slightly thick and glossy.
Final Step
- Remove wings from oven. Brush generously with glaze sauce.
- Return to oven for 10–15 minutes until sticky, caramelized, and deep golden brown.
