Diabetic-Friendly Cottage Cheese Chocolate Protein Balls
Ingredients
1 cup cottage cheese (low fat or full fat, unsweetened)
1/2 cup almond flour (or finely ground oats)
2 tablespoons unsweetened cocoa powder
2 tablespoons natural peanut butter or almond butter (no sugar added)
2 to 3 tablespoons sugar-free sweetener (erythritol, stevia, or monk fruit)
1 teaspoon vanilla extract
Pinch of salt
2 tablespoons chia seeds or ground flaxseed (optional, for fiber)
1/4 cup dark chocolate chips (sugar free, optional)
Directions
Add cottage cheese to a blender or food processor and blend until smooth and creamy.
Transfer to a mixing bowl.
Add almond flour, cocoa powder, peanut butter, sweetener, vanilla, salt, and seeds.
Mix well until a thick dough forms.
Fold in sugar free chocolate chips if using.
Cover and chill the mixture for 20 to 30 minutes.
Roll into small balls (about 1 tablespoon each).
Place in a container and refrigerate for at least 1 hour before serving.
Storage
Keep refrigerated in an airtight container for up to 5 days.
Can be frozen for up to 1 month.
