SOUTHERN PEACH COBBLER

Ingredients
For the Filling
4 cups sliced peaches (fresh, canned, or frozen)
1 cup sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
½ teaspoon cinnamon (optional)
For the Batter
1 cup all-purpose flour
1 cup sugar
1 cup milk
½ cup (1 stick) unsalted butter
1 teaspoon baking powder
¼ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- Place the butter in a 9×13 baking dish and put it in the oven to melt while it preheats.
- In a bowl, combine the peaches, sugar, lemon juice, vanilla, and cinnamon. Set aside.
- In another bowl, mix flour, sugar, baking powder, and salt. Add the milk and stir until smooth.
- Remove the baking dish from the oven once the butter has melted. Pour the batter over the melted butter. Do not stir.
- Spoon the peach mixture evenly over the batter without mixing. The batter will rise around the fruit while baking.
- Bake for 40–45 minutes, until the top is golden brown and the filling is bubbling around the edges.
- Allow to cool slightly before serving.
Serve warm on its own or with a scoop of vanilla ice cream.
