SOUTHERN PEACH COBBLER

Ingredients

For the Filling
4 cups sliced peaches (fresh, canned, or frozen)
1 cup sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
½ teaspoon cinnamon (optional)

For the Batter
1 cup all-purpose flour
1 cup sugar
1 cup milk
½ cup (1 stick) unsalted butter
1 teaspoon baking powder
¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the butter in a 9×13 baking dish and put it in the oven to melt while it preheats.
  3. In a bowl, combine the peaches, sugar, lemon juice, vanilla, and cinnamon. Set aside.
  4. In another bowl, mix flour, sugar, baking powder, and salt. Add the milk and stir until smooth.
  5. Remove the baking dish from the oven once the butter has melted. Pour the batter over the melted butter. Do not stir.
  6. Spoon the peach mixture evenly over the batter without mixing. The batter will rise around the fruit while baking.
  7. Bake for 40–45 minutes, until the top is golden brown and the filling is bubbling around the edges.
  8. Allow to cool slightly before serving.

Serve warm on its own or with a scoop of vanilla ice cream.
