Homemade Chocolate Cream Bars
Ingredients
For the base
2 cups crushed graham crackers or digestive biscuits
1/2 cup melted butter
1/4 cup granulated sugar
For the cream layer
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
8 oz cream cheese, softened
For the chocolate topping
1 cup semi sweet chocolate chips
1/2 cup heavy cream
1 tablespoon butter
Instructions
Prepare the base
Mix crushed biscuits, melted butter, and sugar until well combined
Press the mixture firmly into a lined baking dish to form an even layer
Chill in the refrigerator for 20 minutes
Make the cream layer
Beat the cream cheese until smooth
Add powdered sugar and vanilla extract, mix well
In a separate bowl, whip the heavy cream until stiff peaks form
Gently fold whipped cream into the cream cheese mixture
Spread evenly over the chilled base
Refrigerate for 30 minutes
Prepare the chocolate topping
Heat heavy cream until warm but not boiling
Pour over chocolate chips and let sit for 2 minutes
Stir until smooth, then mix in butter
Let cool slightly, then pour over the cream layer
Chill and serve
Refrigerate for at least 2 hours until set
Cut into bars and serve chilled
Tips
Use high quality chocolate for a richer flavor
For cleaner slices, chill well and use a warm knife
You can add a sprinkle of crushed nuts or sea salt on top
