Easy Homemade Crêpes

Ingredients — makes 8–10

  • 125 g all-purpose flour
  • 2 eggs
  • 250 ml milk
  • 1 tablespoon melted butter, plus extra for the pan
  • A pinch of salt
  • 1 tablespoon sugar and ½ teaspoon vanilla, optional

Instructions

  1. Whisk the eggs and milk. Gradually whisk in the flour and salt until smooth, then stir in the melted butter. Add sugar and vanilla if desired.
  2. Let the batter rest for 20 minutes.
  3. Heat a lightly buttered nonstick pan over medium heat.
  4. Pour in a small ladle of batter, tilting the pan immediately to form a thin layer.
  5. Cook for 45–60 seconds, until the edges lift and the underside is golden. Flip and cook for another 20–30 seconds.
  6. Repeat with the remaining batter. Roll or fold the crêpes and serve warm with your favorite topping.

If the batter feels too thick to spread thinly, stir in a little extra milk.
