Baked Garlic Herb Chicken and Potatoes

Ingredients
1 kg chicken breasts or thighs
1 kg potatoes peeled and cut into large chunks
4 tablespoons olive oil
4 cloves garlic minced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon garlic powder
½ teaspoon onion powder
½ cup chicken broth
2 tablespoons butter cut into small pieces
Optional fresh parsley chopped for serving

Method

1 Preheat oven to 200°C
2 Place the potatoes in a large bowl add half of the olive oil salt pepper paprika oregano thyme rosemary garlic powder and onion powder mix well until potatoes are evenly coated
3 Arrange the seasoned potatoes in a large baking dish in an even layer
4 In the same bowl add the chicken remaining olive oil minced garlic salt and pepper rub well to coat the chicken
5 Place the chicken pieces on top of the potatoes
6 Pour the chicken broth gently into the baking dish around the chicken not over it
7 Dot the butter pieces over the potatoes and chicken
8 Cover the dish with foil and bake for 30 minutes
9 Remove the foil and continue baking for 25 to 35 minutes until the chicken is golden brown and cooked through and the potatoes are tender
10 If needed turn on the broiler for 3 to 5 minutes to get a crisp golden top
11 Remove from oven let rest for 5 minutes before serving
12 Spoon the pan juices over the chicken and potatoes and garnish with fresh parsley if desired

Serving Suggestions
Serve hot with a fresh green salad steamed vegetables or crusty bread to soak up the sauce
