Blueberry Swirl Bread

Ingredients
3 cups all purpose flour
1 tablespoon sugar
1 teaspoon salt
1 teaspoon instant yeast
1 cup warm water
2 tablespoons olive oil
1 cup fresh or frozen blueberries
1 tablespoon flour for coating blueberries

Optional topping
1 tablespoon milk for brushing
1 tablespoon sugar for sprinkling

Instructions
In a large bowl mix flour sugar salt and yeast
Add warm water and olive oil and mix until a sticky dough forms
Knead for 8 to 10 minutes until smooth and elastic
Cover and let rise 1 hour until doubled
Gently flatten dough and sprinkle blueberries coated with flour
Fold dough over itself several times to create a swirl effect
Shape into a round loaf and place in a parchment lined bowl or pan
Cover and let rise 30 to 40 minutes
Preheat oven to 200°C
Brush top with milk and sprinkle sugar if desired
Bake 35 to 40 minutes until golden and hollow sounding
Cool on rack before slicing

Tips
Use frozen blueberries straight from freezer
Do not overmix after adding fruit
Great with butter or cream cheese
