Creamy Cottage Cheese Chocolate Mousse

Serves 2 to 3

Ingredients
1 cup cottage cheese (low fat or full fat)
2 tablespoons unsweetened cocoa powder
2 to 3 tablespoons honey or maple syrup or sugar free sweetener
1 teaspoon vanilla extract
2 tablespoons milk or almond milk
Optional 1 tablespoon peanut butter or hazelnut spread
Optional pinch of salt

Instructions
Place the cottage cheese in a blender or food processor.
Blend for 1 to 2 minutes until completely smooth and creamy with no lumps.
Add cocoa powder sweetener vanilla extract milk and salt.
Blend again until thick glossy and fully combined.
Taste and adjust sweetness if needed.
Transfer to cups or a piping bag for a swirl shape.
Refrigerate for at least 30 minutes for mousse texture.
For frozen texture place in freezer for 1 to 2 hours and stir once halfway.
