CREAMY SUN-DRIED TOMATO BAKED CHICKEN

This is one of those rich, creamy, flavor-packed chicken dishes that tastes like it came from a restaurant — but it’s incredibly easy to make at home. Juicy chicken breasts baked in a garlic parmesan cream sauce with herbs and sun-dried tomatoes… absolutely irresistible.

INGREDIENTS

For the chicken:
4–5 boneless, skinless chicken breasts
Salt and black pepper to taste
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 tablespoon olive oil

For the creamy sauce:
2 tablespoons butter
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 ½ cups heavy cream
½ cup chicken broth
¾ cup grated Parmesan cheese
½ cup chopped sun-dried tomatoes (drained if in oil)
1 teaspoon Italian seasoning
Salt and pepper to taste
Optional: 1 cup shredded mozzarella for topping

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken
    Lightly grease a baking dish. Season the chicken breasts on both sides with salt, pepper, garlic powder, and Italian seasoning. Arrange them evenly in the dish.
  3. Make the creamy sauce
    In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant.

Stir in the flour and cook for 1 minute to remove the raw flour taste.

Slowly whisk in the heavy cream and chicken broth. Keep whisking until smooth and slightly thickened (about 3–5 minutes).

Add Parmesan cheese, sun-dried tomatoes, Italian seasoning, salt, and pepper. Stir until the cheese melts and the sauce becomes rich and creamy.

  1. Assemble
    Pour the hot creamy sauce evenly over the chicken breasts. Make sure they’re well coated.

If using mozzarella, sprinkle it over the top for extra cheesiness.

  1. Bake
    Bake uncovered for 30–40 minutes, or until the chicken is fully cooked (internal temperature 165°F / 74°C). The sauce will be bubbling and slightly golden on top.
  2. Rest and serve
    Let the chicken rest for 5 minutes before serving. Spoon extra sauce over the top.

Serving ideas
Serve over pasta, rice, or mashed potatoes. It’s also amazing with roasted vegetables or garlic bread to soak up that creamy sauce.

Tip for extra flavor
Add fresh spinach to the sauce before pouring it over the chicken, or sprinkle fresh parsley on top after baking.
