Crispy Spinach Cheese Fritters

Ingredients

Main

  • 4 cups fresh spinach (packed)
  • 2 large eggs
  • 1 cup shredded mozzarella (or cheddar, or mix)
  • ½ cup grated Parmesan
  • ½ cup all-purpose flour
    (or almond flour for low-carb)
  • 2 cloves garlic, finely minced
  • ¼ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp chili flakes (optional)
  • ½ tsp Italian seasoning or dried oregano

Optional Add-ins

  • 2 tbsp chopped green onions
  • 1 tbsp fresh parsley or dill
  • Zest of ½ lemon (great freshness)

For Cooking

  • Olive oil or butter (if pan-frying)
  • Parchment paper (if baking)

Instructions

Prepare the Spinach

  1. Add spinach to a pan over medium heat.
  2. Cook just until wilted (1–2 minutes).
  3. Let cool slightly, then squeeze out ALL excess liquid using a towel.
  4. Finely chop the spinach.

This step is key for crisp fritters.*

Make the Batter

In a large bowl:

  1. Whisk eggs.
  2. Add spinach, mozzarella, Parmesan, garlic, salt, pepper, chili flakes, and seasoning.
  3. Stir in flour until a thick, scoopable mixture forms.

Cook (Choose Method)

Pan-Fried (Extra Crispy)

  1. Heat 2 tbsp olive oil in a nonstick skillet over medium heat.
  2. Scoop 2 tbsp batter per fritter and flatten slightly.
  3. Cook 3–4 minutes per side until golden brown.
  4. Transfer to paper towel-lined plate.

Oven-Baked (Lighter)

  1. Preheat oven to 400°F / 200°C.
  2. Line a baking sheet with parchment.
  3. Spoon batter into thin rounds.
  4. Lightly brush tops with olive oil.
  5. Bake 18–22 minutes, flipping halfway.

Serving Ideas

  • Serve with garlic yogurt sauce
  • Dip in sour cream or tzatziki
  • Top with fried egg
  • Pair with salad or soup
  • Great as snack, breakfast, or appetizer

Garlic Yogurt Sauce (Quick)

  • ½ cup Greek yogurt
  • 1 small garlic clove, grated
  • Salt + lemon juice to taste

Mix and serve chilled.

Tips for Best Results

Squeeze spinach very dry
Don’t make fritters too thick
Use a hot pan for crisp edges
Parmesan adds crunch—don’t skip it
