Healthy Energy Cookies (No Flour • No Refined Sugar)

These cookies are naturally sweet, crunchy, and packed with healthy fats, fiber, and plant protein. Perfect as an energy snack, breakfast bite, or guilt-free dessert.

Ingredients

  • 70 g dried apricots (2.5 oz)
  • 50 g walnuts (1.8 oz)
  • 70 g hazelnuts (2.5 oz)
  • 60 g almonds (2 oz)
  • 20 g pine nuts (0.7 oz)
  • 30 g pumpkin seeds (1 oz)
  • 40 g sunflower seeds (1.4 oz)
  • 20 g sesame seeds (0.7 oz)
  • 20 g flaxseeds (0.7 oz)
  • 40 ml natural honey (about 2 ½ tbsp)
  • 1 egg white
  • A pinch of salt

Instructions

  1. Prepare the apricots
    If your dried apricots are very firm, soak them in warm water for 10 minutes, then drain well. Chop them finely or pulse briefly in a food processor until sticky.
  2. Chop the nuts
    Roughly chop walnuts, hazelnuts, almonds, and pine nuts. You want texture, not powder.
  3. Toast for extra flavor (optional but recommended)
    Lightly toast all nuts and seeds in a dry pan over low heat for 3–4 minutes, stirring constantly. Let cool completely.
  4. Mix the dry ingredients
    In a large bowl, combine all nuts, seeds, chopped apricots, and salt. Mix well.
  5. Add the binders
    Add the egg white and honey. Stir until everything is evenly coated and sticks together. The mixture should be slightly sticky but moldable.
  6. Shape the cookies
    Line a baking tray with parchment paper.
    Scoop small portions and press into cookie shapes using your hands or a spoon.
  7. Bake
    Bake in a preheated oven at 170°C (340°F) for 12–15 minutes, until lightly golden.
    Do not overbake — they will firm up as they cool.
  8. Cool completely
    Let the cookies cool on the tray. This step is important for the perfect texture.
