Old-Fashioned Banana Oat Custard Cake

When ripe bananas, rolled oats, and eggs come together, they create a tender, oven-baked dessert with a melt-in-your-mouth texture. It tastes like a nostalgic homemade breakfast from Grandma’s kitchen, with a soft, custard-like center hidden inside.

Ingredients
2 ripe bananas
1½ cups rolled oats
2 eggs
½ cup milk (dairy or plant-based)
1 teaspoon baking powder
1 teaspoon vanilla extract
½ teaspoon cinnamon (optional)
A pinch of salt

Instructions
1 Preheat your oven to 350°F (175°C). Lightly grease an 8 × 8 inch baking dish or line it with parchment paper.
2 Peel the bananas and place them in a mixing bowl. Mash them well with a fork until smooth.
3 Add the eggs to the mashed bananas and whisk until fully combined.
4 Pour in the milk and vanilla extract and mix again until smooth.
5 Add the rolled oats, baking powder, cinnamon if using, and salt. Stir until everything is evenly mixed and the oats are well coated.
6 Let the batter rest for 5 minutes so the oats can absorb some liquid and soften.
7 Pour the mixture into the prepared baking dish and spread it evenly.
8 Place in the oven and bake for about 35 minutes, or until the top is set and a knife inserted in the center comes out mostly clean with a slightly custardy texture.
9 Remove from the oven and allow it to cool for at least 10 minutes before slicing.

Serving suggestions
