Vanilla Muffins

Ingredients

2 cups all purpose flour

1 cup granulated sugar

2 teaspoons baking powder

½ teaspoon salt

2 large eggs at room temperature

¾ cup milk

½ cup vegetable oil or melted butter

1 tablespoon vanilla extract

½ cup chocolate chips or nuts

Preparation

1 Preheat oven to 180°C
Line a muffin tin with paper cups

2 In a large bowl mix flour sugar baking powder and salt
Stir well and set aside

3 In another bowl whisk eggs milk oil and vanilla until smooth

4 Pour wet ingredients into dry ingredients
Mix gently just until combined
Do not overmix

5 If using add chocolate chips or nuts and fold lightly

6 Divide batter evenly into muffin cups filling about ¾ full

7 Bake for 18 to 22 minutes until golden and a toothpick comes out clean

8 Remove from oven
Let cool 5 minutes then transfer to a rack
