Ingredients
2 cups mixed nuts (almonds, peanuts, cashews or walnuts), roughly chopped
1 cup dried fruit (raisins, cranberries, dates or apricots), chopped
1 cup digestive biscuits or graham crackers, crushed
1/2 cup peanut butter or almond butter
1/2 cup honey or maple syrup
2 tablespoons butter
1 teaspoon vanilla extract
Chocolate Topping
1 cup dark or milk chocolate, chopped
1 tablespoon oil or butter
Instructions
- In a large bowl, mix the chopped nuts, dried fruit, and crushed biscuits.
- In a saucepan over low heat, melt the peanut butter, honey, and butter together. Stir until smooth.
- Remove from heat and add vanilla extract.
- Pour the warm mixture over the dry ingredients and mix well until everything is coated.
- Press the mixture firmly into a lined rectangular pan.
- Melt the chocolate with oil or butter, then spread evenly over the top.
- Refrigerate for at least 2 hours until firm.
- Cut into bars or squares and serve.
Tips
You can add coconut flakes or sesame seeds for extra flavor.
Store in the fridge up to 1 week or freeze for longer storage.
