Walking Taco Casserole All the Fun of Tacos in One Dish
Ingredients
1 lb ground beef
1 packet taco seasoning
1 cup crushed tortilla chips
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup canned corn, drained
1 cup black beans, drained and rinsed
1/2 cup salsa
1/4 cup sour cream
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until fully browned. Drain any excess fat.
Add the taco seasoning and follow the packet instructions, usually adding a little water and letting it simmer for a few minutes until the meat is well coated with flavor.
Stir in the corn, black beans, and salsa. Mix everything together and cook for about 2 to 3 minutes until heated through.
Lightly grease a baking dish. Spread the beef mixture evenly into the dish.
Top the mixture with crushed tortilla chips, then sprinkle the shredded cheddar and mozzarella cheese evenly over the top.
Bake in the oven for 15 to 20 minutes, or until the cheese is melted, bubbly, and lightly golden.
Remove from the oven and let it cool slightly. Add small spoonfuls of sour cream on top before serving.
