Ingredients
- 2 lb (900 g) potatoes, thinly sliced
- 1 small onion, thinly sliced
- 2 cups shredded cheddar cheese
- 2 cups heavy cream
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp salt, or to taste
- ½ tsp black pepper
- Fresh parsley, for garnish
Method
- Preheat the oven to 375°F / 190°C and lightly grease a baking dish.
- Peel the potatoes and slice them into thin, even rounds.
- In a bowl, mix the heavy cream with garlic, thyme, salt, and black pepper.
- Arrange a layer of potatoes in the baking dish, followed by sliced onion and a little shredded cheese.
- Repeat the layers until all the potatoes and onions are used.
- Slowly pour the seasoned cream over the potatoes, making sure it reaches between the layers.
- Sprinkle the remaining cheddar cheese generously over the top.
- Cover with foil and bake for about 40 minutes.
- Remove the foil and bake for another 25–35 minutes, until the potatoes are tender and the top is bubbling and golden brown.
- Let rest for 10 minutes, then garnish with fresh parsley and serve warm.
Tip: Slice the potatoes about 3 mm thick so they cook evenly and become soft and creamy inside.
