Classic Scalloped Potatoes

Ingredients

  • 2 lb (900 g) potatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cups shredded cheddar cheese
  • 2 cups heavy cream
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp salt, or to taste
  • ½ tsp black pepper
  • Fresh parsley, for garnish

Method

  1. Preheat the oven to 375°F / 190°C and lightly grease a baking dish.
  2. Peel the potatoes and slice them into thin, even rounds.
  3. In a bowl, mix the heavy cream with garlic, thyme, salt, and black pepper.
  4. Arrange a layer of potatoes in the baking dish, followed by sliced onion and a little shredded cheese.
  5. Repeat the layers until all the potatoes and onions are used.
  6. Slowly pour the seasoned cream over the potatoes, making sure it reaches between the layers.
  7. Sprinkle the remaining cheddar cheese generously over the top.
  8. Cover with foil and bake for about 40 minutes.
  9. Remove the foil and bake for another 25–35 minutes, until the potatoes are tender and the top is bubbling and golden brown.
  10. Let rest for 10 minutes, then garnish with fresh parsley and serve warm.

Tip: Slice the potatoes about 3 mm thick so they cook evenly and become soft and creamy inside.
