Introduction
This soup gives you all the comforting flavors of traditional cabbage rolls without the extra work of stuffing and rolling. It’s hearty, rich, and perfect for a simple family meal.
Ingredients
1 tablespoon olive oil
1 pound ground beef
1 small onion, chopped
2 cloves garlic, minced
1/2 head green cabbage, chopped
2 medium carrots, sliced
1 can crushed tomatoes (400 g)
3 tablespoons tomato paste
4 cups beef broth
1/2 cup uncooked white rice
1 teaspoon paprika
1 teaspoon dried thyme
Salt and pepper to taste
1 tablespoon brown sugar (optional)
Fresh parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
Add chopped onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook for another minute.
Add cabbage and carrots, stirring well to combine. Cook for about 5 minutes until slightly softened.
Pour in crushed tomatoes, tomato paste, and beef broth. Stir everything together until well mixed.
Add rice, paprika, thyme, salt, pepper, and brown sugar if using. Bring the soup to a boil.
Reduce heat to low, cover, and let it simmer for 25 to 30 minutes, or until the rice is tender and the cabbage is soft.
Taste and adjust seasoning if needed.
Serve hot, garnished with fresh parsley.
Tips
You can substitute ground beef with ground turkey for a lighter version.
If the soup thickens too much, add a little extra broth or water.
For extra flavor, add a splash of lemon juice before serving.
