Pecan Pie Cookies


Ingredients
For the cookie base
1 cup unsalted butter, softened
2/3 cup granulated sugar
1/2 teaspoon salt
2 teaspoons vanilla extract
2 cups all-purpose flour
For the pecan filling
1 cup chopped pecans
1/2 cup brown sugar
1/4 cup heavy cream
1 tablespoon unsalted butter
1 teaspoon vanilla extract
Pinch of salt
Instructions
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper. Beat the butter and sugar until light and creamy. Add vanilla extract and salt and mix well. Gradually add flour and mix until a soft dough forms. Roll into small balls and place on the baking sheet. Press a small indentation in the center of each. Bake for 10 minutes and remove from oven.
Make the filling by heating brown sugar, cream, and butter in a saucepan until smooth. Add pecans, vanilla, and salt and mix well.
Spoon the filling into each cookie and return to oven for 8–10 minutes until golden. Let cool before serving.
