Savory Spinach and Cheese Baked Quiche

Soft inside, golden on top, and full of flavor, this baked quiche is perfect for breakfast, lunch, or a light dinner. It can be served warm or cold.

Ingredients
6 large eggs
1 cup milk or cooking cream
1 cup shredded cheese (cheddar, mozzarella, or mix)
1 cup chopped fresh spinach
1/2 cup chopped onion
1/2 cup diced bell pepper
1/2 cup chopped zucchini (optional)
1/2 cup diced turkey ham or beef sausage (optional)
2 tablespoons olive oil or butter
3 tablespoons all-purpose flour
1 teaspoon baking powder
Salt and black pepper to taste
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano or parsley

Instructions
Preheat oven to 180°C (350°F) and grease a baking dish or pie pan.
Heat olive oil in a pan and sauté onion, bell pepper, zucchini, and spinach for 3 to 4 minutes until softened. Set aside.
In a large bowl, whisk the eggs with milk or cream.
Add flour, baking powder, salt, pepper, paprika, garlic powder, and herbs. Mix well.
Stir in the shredded cheese, cooked vegetables, and meat if using.
Pour the mixture into the prepared baking dish.
Bake for 35 to 40 minutes until the center is set and the top is golden.
Let rest for 5 to 10 minutes before slicing.

Serving ideas
Serve with green salad, bread or toast, or yogurt or sour cream.
Store in the refrigerator for up to 3 days.
